Smoked Salmon Pâté

I think I mentioned that I smoked salmon on Saturday for our guests. Smoked salmon in my opinion, is definitely a food of the gods! I always smoke extra, because I so love to use it in dishes. Quiche, pasta, soup, spreads... it's just incredible stuff! I like to buy big thick cuts, and if I can't get the "steaks" then I simply buy the whole half, because those thin tail ends really suck up the smoke flavor and are beyond fabulous in dishes.
I'd also made a loaf of the crusty "NY Times no knead bread" and have some left, so I thought for lunch today I'd pop some slices of it under the broiler, and we'll have smoked salmon spread on them today. Here's how I make it:
Smoked Salmon Pâté
Toss the onion and the pecans into a small food processor and chop finely. Mix them along with the rest of the ingredients in a bowl, and mash it all up well with a fork. That's it! And it's fabulous!
You of course can roll yours into a ball in chopped pecans, I just put mine right into a little tupperware container, so we can scoop it out onto our bread.

- 6 ounces smoked salmon, chopped
- small chunk (enough to make about 2 teaspoons diced) of onion or 2-3 green onions, whichever you have on hand
- 1/2 cup pecans
- 1 1/2 teaspoons prepared horse radish
- 1 teaspoon lemon juice
- 1 8 ounce package of cream cheese, softened

CJ, how close does Jim work that he is able to come home for lunch? Is this "coming home for lunch" a good thing?....LOL
After several weeks at home, Scott has travel plans tomorrow to Denver. I am SEW looking forward to "sew Cindy time". But - I have groceries to get, cleaning to do and mopping to do while he's gone for three days so I don't know how much "sew Cindy time" I'll get.
Yes, I'm bad.
BTW - I LOVE the stuffed salmon they offer at Costco. We LOVE salmon - anyway it's cooked.
