When in Arkansas...
Sunday, February 26, 2012 at 4:06PM Do as the Arkansonians do! I think I mentioned “Arkansonian” in the presence of a native once, and was told that wasn’t the proper term. No kidding… LOL We’ll never be natives, but now that we’ve made up our minds to plant roots here, we can have some fun with it right?
And that’s just what we did this afternoon, after working through our list of chores! I wanted to try stuffing some potatoes and baking them in the Big Green Egg along with a chicken for dinner tonight, but the only apple corer I have cuts spirals at the same time.
Jim gave me a big grin, said “I’ll be right back”, and then I just started giggling!
Great use of drill huh? But hey it worked great! He drilled not quite to the end of the potato, so we could cram plenty of stuffing inside without it falling out the end.
A thin slice of proscuitto, some minced onions, mushrooms and bleu cheese, then I wrapped two slices of thick bacon around each potato, and wrapped them in heavy foil.
Mmmm! I can’t wait to taste these! If I remember, I’ll slice one open after it’s baked and take a picture.

I always thought they were Arkansans - at least that is what my aunt that lived there for 10 years said.

Just wanted to know if Jim was contemplating taking the potatoes to his Bridgeport Milling or would that have been presicion overkill?
Now if we could somehow make this recipe with the Bernina Cutwork tool.... hmmm.

Now I'm really jealous. I've been wanting the Green Egg for so long but just can't justify the price. I might cave when I start seeing the food you knock out from it.. BTW, for anyone that's wondering, it's the very best in a grill/barbeque you can get as far as flavor is concerned.
