Mmmmm... yummy!

And fabulously easy!

Yesterday my sister was telling me about this incredibly easy coffee cake made with puff pastry… everyone keeps frozen puff pastry in their freezer right?  It’s fabulous for a lot of things!

She emailed me the link for the recipe, and I decided to try it this morning since Jim is home for the day… yum yum yum!

I made one with apricot preserves, and one with blackberry preserves that I made last summer.

I haven’t tasted the blackberry yet, but I’m sure it’s going to be every bit as yummy as the apricot one! 

It took all of ten minutes to make these, not counting baking them for 30 minutes. 

I’m going to have to experiment more, with some dried fruits as well as fresh fruits!

I didn’t frost mine, as that would have been a bit too sweet for my taste… making it even simpler!

LOL no I don't keep puff pastry in the freezer - I never plan ahead like you do :)

Oh,god. Another easy yummy fattening recipe. You are bad!!

Hope the float to the Dr. was ok.

Throughout the day, stand on your stairs and stretch your calf muscles in the affected leg/foot by hanging the foot. I did that and it really helps along with the frozen water bottle.

I baked one with just the cream cheese filling and had it with strawberries for dessert tonight! Yummy! Blackberry jam tomorrow!
