Yeeeesssss!!!!! It's a GIRL!

Everyone who crossed their fingers for me, THANK YOU!  Jim’s coworker’s baby was born, and it is a girl!  My pink quilt is all done and ready to go, woohoo!

But I’m here to tell you, RUN to the store and grab a tub of nasty Cool Whip, because Karen’s cheesecake recipe?  Oh baby!  If you were one of the ones who tried my cheesecake recipe and liked it, then this one will thrill you to death, because it’s half the work and every bit as good, in fact I like it better!

I’ve never cared for the taste of no bake cheesecakes, but this one uses melted white chocolate in it just like my recipe… it makes all the difference in the world.  The cool whip makes it light and fluffy, the oreo cookie crust (purchased even!) adds just the right bite of color and chocolate, and the blackberry sauce?  Oh yeah, it’s orgasmic.  Trust me.

Normall when my folks come to visit, I send whatever desert I made home with them.  Today I refused.  Oink, oink!    I’m going to eat it ALL myself, it’s SO good!

I followed Karen’s recipe exactly, using an oreo cookie crust instead of plain graham cracker crust, and replaced the toffee with the sauce.

To make the sauce, use 2 cups of blackberries tossed with 2 tablespoons of cornstarch and 2 tablespoons of sugar (or to taste) and 1/2 cup of water.  Mash the berries and cook over low heat until it thickens.  Strain it to remove the seeds, let cool, and serve with the cheesecake.

Oh baby!

LOL - so glad you liked the cheesecake recipe. I normally do not make the no bake either but I loved this one so much I plan on making it on the road also as it doesn't need to be baked and it taste wonderful! We ate the whole pie in less than 48 hours :) I will have to try it with a berry topping too.

This sounds great--headed to the store again!!
I make a killer of a chocolate chip cheesecake, but for summertime this one would be the best choice--no hot oven! And we love berry sauces!

Made this last night. Sprinkled mini choc chips on top then had cherries on the side for those that wanted them. Easy and delicious! Tx for sharing the recipe!
